Michael Q Todd Muffins (Banana, Blueberry, Sultana, Wholemeal sugar free muffins)

Ingredients
Makes: 12 Giant muffins or 18 medium sized ones
• 3 medium bananas mashed
• 15mls ASTEVIA liquid organic stevia
• 2 egg
• 180ml water
• 180ml vegetable oil
• 3 cups (250g) wholemeal flour
• 1.5 teaspoon bi-carb soda
• 2.5 teaspoons baking powder
• 1 cup fresh or frozen blueberries
• 1 cup soaked sultanas
Preparation

Preheat your oven to 180 degrees C. Grease your muffin tray/cups with a light coating of butter..

Mix together mashed bananas, egg, oil and water in a large bowl. Sift flour baking powder and baking soda and mix in until mostly smooth (you will still see lumps from the banana, but that’s okay!). Gently fold the sultanas and blueberries into the batter.

Bake in the preheated oven until golden and the tops spring back when lightly pressed, approximately 20 minutes for the medium sized muffins and 25 mins for the giant sized muffins. Leave for 15 mins and remove muffins from tins, and cool on a wire rack.
